Fun Zucchini Spicy Dippers

A little motivation with your veggies can be a game changer (especially for kids!) I always forget about these recipes and then come across them and say to myself “why don’t I make these all the time! They're so much FUN to eat!” 

Here are 2 recipes: one is with parmesan cheese and the other is a dairy free option......

For both recipes you will need ~3 medium zucchini -cut into 1/4 inch thick fries- can also do fry “chips”

Ingredients:
(Option 1)
2 Tbsp olive oil
1/2 cup parmesan cheese
1 tsp any dried herb such as oregano, parsley or thyme
1/2 tsp garlic powder
Pinch of salt and pepper (to taste)

Preheat oven to 400° F. Line baking sheet with parchment or aluminum foil. Spray with non-stick cooking spray.


In bowl, combine parmesan, dried herbs, smoked paprika and garlic powder salt and pepper.

Toss the zucchini with olive oil and roll in parmesan/herb mixture to coat all sides. Place zucchini onto prepared baking sheet. Sprinkle with extra parmesan/herb mixture if needed.

Bake at 425F ~30 mins
*for extra crisp can add breadcrumbs to mixture

Option 2 ingredients (Dairy free option)
1/2 cup almond flour
2 Tbsp nutritional yeast
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
2 Tbsp Dijon mustard

Mix dry ingredients, roll zucchini in Dijon mustard, coat zucchini in bowl with mixture, lay on tray and bake same as above!

Eat them plain, or dip them in marinara sauce, ranch dressing or any favorite condiment if you need alittle extra flavor!
